bowl with tomato based lasagna soup

If you love lasagna, you will definitely want to make this delicious One Pot Lasagna Soup. This is the easy soup recipe I make when I want a quick version of a traditional lasagna. It's loaded with Italian sausage, lasagna noodles and Italian spices and topped with a ricotta, mozzarella and Parmesan cheese.

"This is so delicious. I have made it several times and have brought it to two potlucks at work. Everyone always raves about it. It has quickly become my favorite soup that can be enjoyed any time of year." ~ Meg

A white bowl of lasagna soup topped with ricotta cheese.

The cold winter days and nights call for a warm bowl of soup. Creamy Broccoli and Cheese Soup, Creamy Green Enchilada Chicken Soup, and Split Pea with Ham are all favorites of my personal chef clients. My easy lasagna soup is a favorite of my Italian food loving clients.

One Pot Lasagna Soup includes Italian sausage, diced tomatoes, red peppers, and lasagna noodles. With seasonings of an Italian spice blend, including oregano, garlic, thyme, rosemary and basil, this delicious soup is a must for your list of new recipes to try.

It's perfect for when you are craving lasagna, but want to make a speedier version of the Italian classic comfort food. Think of it as a delicious messy lasagna that isn't stacked in all those neat layers.

Amy's recipe tips

  • Choose either sweet or hot Italian sausage. Add whichever one is your favorite.
  • Shallots are the milder cousin of the other onions. A good substitute is yellow onion.
  • I always have a few lasagna noodles left after making lasagna so they are perfect to use in soup. But other pasta shapes such as rotini, farfalle, and orecchiette can be used in Lasagna Soup.
  • The noodles cook right in the soup to soak up all the goodness. Cover the pot the last 5 minutes of simmering the soup to help the noodles finish cooking.

What to serve with lasagna soup

Soups are always a hit on a cold night, and a couple of seasonal side dishes will complement the meal.

Pair this One Pot Hearty Lasagna Soup with some of the following:

  • A crisp salad of romaine lettuce, shaved fennel and sliced oranges that is drizzled with a light vinaigrette.
  • Sprinkle a few crunchy crostini with a bit of Parmesan cheese. Pop them in a 400-degree F oven for 5 minutes for a complete the meal.
  • Puff Pastry Bread Sticks are light and crispy.
  • Serve Antipasto Skewers as an appetizer.

I served this one-pot lasagna soup for dinner last night with a heavy sprinkle of shredded parmigiano reggiano cheese and the family devoured it. It was so easy to make that I know I'll be making it more often.
