I was dashing off to a meeting one night last week and had volunteered to bring a snack. I grabbed some frozen puff pastry and a jar of everything bagel seasoning from the grocery store. 30 minutes later, I was out the door with a big batch of crispy, salty, garlicky and Parmesan dusted homemade cheese twists.
These easy to make puff pastry breadsticks were such a hit that several people asked for the recipe. So I knew I needed to share it with you too.

- 1 package frozen puff pastry sheets ~ Frozen puff pastry is fabulous! It's convenient and foolproof. But if you're a baker at heart, you can make your own.
- everything bagel seasoning ~ A multi-purpose seasoning blend of coarse salt, dried minced onions, garlic powder, and black and white sesame seeds. There are many great ones available online and at the grocery store.
- Parmesan cheese - Grated hard cheeses work best in this recipe. Also try Grana Padano or Pecorino Romano.

- Position the baking racks in the upper and bottom third of the oven and preheat it.
- It's best to work with cold puff pastry dough. Place 1 sheet in the fridge as you work with the other one.
- Unfold the puff pastry sheet and brush with egg wash (1 egg beaten with a splash of water). Sprinkle the everything bagel seasoning and Parmesan cheese on the dough.
4. Using a rolling pin, gently press the ingredients into the dough. Cut the dough into long strips and twist the opposite ends to form a spiral.
5. Place the cheese twists on parchment lined baking sheets and bake in the oven.

Refrigerate ~ Store unbaked twists on a covered baking sheet in the refrigerator for up to 1 day. Remove them from the fridge while the oven heats to 400 degrees F. Bake for 15 to 20 minutes, flipping once.
Freeze baked ~Place baked cheese twists in a resealable bag and freeze for up to 1 month. To serve, remove them from the freezer while the oven heats to 375 degrees F. Bake for 3 to 5 minutes.
Freeze unbaked ~ Flash freeze the unbaked twists on a baking sheet for 30 minutes or until firm. Place frozen cheese twists in a resealable bag in the freezer for up to 1 month. To serve, remove them from the freezer while the oven heats to 400 degrees F. Place on a baking sheet and bake for 20 to 25 minutes flipping once. Watch closely toward the end of the baking time so the twists don't burn.

- 1 large egg
- 1 (17 ounce) package frozen puff pastry, 2 sheets, thawed
- 1/2 cup grated Parmesan cheese
- 2 tablespoons everything bagel seasoning
Instructions
- Prep: Preheat oven to 400 degrees F. Arrange the baking racks in the upper and lower one-third of the oven.
- Line pans: Line 2 large baking sheets with parchment paper. Set aside.
- Make egg wash: Beat the egg with 1 teaspoon water. Set aside.
- Season puff pastry: Work with 1 sheet of puff pastry at a time. Place the other sheet in the fridge. Unfold the dough on a work surface. Brush generously with the egg wash. Evenly sprinkle with half of the everything bagel seasoning and Parmesan cheese on the dough. Use a rolling pin to lightly press the seasoning and cheese lightly into the dough.
- Form twists: Using a pizza roller or sharp knife, cut the sheet of puff pastry into 9 (1-inch) strips. Twist the opposite ends 3 to 4 times to get a spiral effect. Place the cheese twists an inch apart on the prepared baking sheets.
