This super simple and cheesy ham and potato soup warms you up on a chilly day. The potatoes simmer right in chicken stock soaking up all the delicious flavor. Heavy cream, sour cream, plenty of Colby Jack cheese and smoky ham make this soup rich and hearty.

During the hustle and bustle of the holidays, I’m always looking for easy and quick to make lunch and dinner recipes. I’d rather mix and mingle with family and friends than spend long hours in the kitchen. But I don’t want to skimp on lots of delicious flavors. That’s when I make a big pot of this creamy and cheesy ham and potato soup.

  • pepper
  • sour cream
  • heavy cream
  • Colby Jack cheese
  • smoked ham

This soup is EASY to toss together. With just a few steps, this simple cheesy potato soup recipe is ready in about 30 minutes.

Cook the peeled and cubed potatoes in reduced sodium chicken stock. When the potatoes are tender mash them.

Stir in garlic and onion powders, kosher salt and pepper. Next mix in the rich and tasty add-ins of sour cream, heavy cream, shredded Colby Jack cheese and smoky diced ham.

It’s that easy!

Serve the piping hot soup in deep bowls. Top with dollops of sour cream, shredded cheese, ham, and thinly sliced scallions.

  • The best potato for potato soup is Yukon Gold. Their buttery flavor and ease of mashability make them my go to soup potato.
  • To control the amount of salt in the soup, use reduced sodium chicken stock. You can always add more salt, but it’s difficult to remove a salty taste from soup.
  • Use a potato masher or immersion blender to mash the cooked potatoes. The soup will continue to thicken as it cools.
  • Change up the cheeses to suit your tastes. Sharp cheddar, mozzarella, Swiss, and Gruyere are tasty options.
  • Crispy crumbled bacon can replace the diced ham.

what to serve with ham and potato soup

This ham and potato soup is so hearty that it eats like a meal. Simple sides of a mixed green salad with red wine vinaigrette and a loaf of bread are perfect accompaniments. Another tasty side is sliced tomatoes, cucumber, onion and fresh basil drizzled with olive oil and balsamic vinaigrette. Finish the meal with something for your sweet tooth. My faves are these delicate shortbread cookies or chocolatey Texas sheet cake.

Description

This super simple and cheesy ham and potato soup warms you up on a chilly day. The potatoes simmer right in chicken stock soaking up all the delicious flavor. Heavy cream, sour cream, plenty of Colby Jack cheese and smoky ham make this soup rich and hearty.


Ingredients

Units Scale
  • 3 pounds of Yukon Gold potatoes, peeled and cut in cubes
  • 4 cups reduced sodium chicken stock
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1/4 cup sour cream, plus more for serving
  • 2/3 cup heavy cream
  • 2 cups shredded Colby jack cheese, divided
  • 2 cups diced ham, divided
  • 2 scallions, thinly sliced

Instructions

  1. In a large pot over medium high heat add the potatoes and reduced sodium chicken stock. Bring to a boil then reduce the heat to a simmer. Cover the pot and cook for 13 to 15 minutes or until the potatoes are tender.
  2. Turn off the heat and mash the potatoes with a potato masher or immersion blender.
  3. Return the heat to medium low and stir in the garlic powder, onion powder, kosher salt and pepper. Mix in the sour cream, heavy cream, 1 1/2 cups of cheese, and 1 1/2 cups of ham. Continue to stir and heat the soup until the cheese is melted.
  4. Serve the soup in bowls topped with more sour cream, cheese, ham and scallions.
