Ingredients
- 8 tablespoons salted butter, melted and cooled slightly
- 2 large eggs, beaten
- ¼ cup light brown sugar
- ¼ teaspoon nutmeg
- pinch of kosher salt
- ½ fresh pineapple, cut in 1 inch cubes, about 2 cups
- 4 cups cubed rustic bread, cut in 1 inch pieces
- ½ cup apple juice
Instructions
- Preheat oven to 375 degrees F.
- In a large bowl, add the melted butter, beaten eggs, light brown sugar, nutmeg, and kosher salt. Stir to combine.
- Add the pineapple chunks, bread cubes, and apple juice. Stir to thoroughly moisten the bread and combine all the ingredients.
- Put the pineapple mixture into a 1 1/2 quart baking dish.
- Bake for 30 to 35 minutes. The pineapple bread pudding should be bubbly and golden brown.
- Serve warm or at room temperature.
