    Fresh Pineapple Bread Pudding. This side dish is both savory and sweet and is an easy to make recipe. It has only a handful of ingredients including fresh pineapple, bread, eggs, butter, brown sugar, nutmeg, kosher salt, and apple cider. Serve along side baked ham, roasted pork or barbecue chicken.

    Fresh pineapple bread pudding is on our Easter menu every year. It's savory and sweet flavors compliment a honey baked ham ~ our family's favorite!

    Nothing beats the tropical flavor of fresh pineapple. The baked side dish has both crispy crunchy and soft bread cubes for a nice contrast of textures.

    I also love to enjoy a warm bowl of pineapple bread pudding for breakfast or as a late night treat. A dollop of fresh whipped cream is a delicious topper to the dish too.

    Just a handful of ingredients is needed for this delicious recipe. It's always on our Easter menu. Scroll down to the recipe for full quantities of the ingredients.

    • salted butter
    • large eggs
    • light brown sugar
    • nutmeg
    • kosher salt
    • fresh pineapple

    • apple juice

    substitutions and additions

    • Grab a can of pineapple ~ If fresh pineapple is not available, substitute a 20 ounce can of drained pineapple chunks.
    • Try a different juice ~ In place of apple juice, use pineapple, pear, orange or white grape juices.
    • Stir in dried fruit ~ For a pop of color and tart tangy flavor, add ½ cup of dried cranberries along with the pineapple.

    I love cooking and baking with fresh fruits. Fresh Strawberry Crumb Cake, Apple Crumb Bars, Summery Blueberry Cobbler, Grilled Pork Tenderloin with Berry Bacon Sauce, and Thyme Rubbed Pork Chops with Apple Shallot Sauce are just a few recipes that I make over and over again.

    Each recipe starts with picking the best fresh fruits. Below are some tips for choosing the freshest pineapple for either baking or enjoying in a fruit salad.

    • Check the color ~ Ripe pineapples can have an exterior that is all green or a greenish yellow. The leaves should be a healthy vibrant green.
    • Give it a sniff ~ A perfectly ripe pineapple will smell sweet and tropical. If it has no smell, it is underripe. If it smells acidic, it is most likely overripe.
    • Give it a squeeze ~ When ripe, a pineapple will still be firm, but will have a slight give when squeezed. Make sure it does not have any mushy spots or mold. Those are signs of a past its prime pineapple.
    • Put it on a scale ~ The best tasting pineapples are heavy for their size.

    No one factor is best for choosing a delicious fresh pineapple. Take into account its color, smell, firmness, and weight when picking out the optimal fruit.

    • Start combining the ingredients ~ In a large bowl, add the melted butter, beaten eggs, light brown sugar, nutmeg, and kosher salt. Stir to combine.
    • Add the stars of the recipe ~ Add the fresh pineapple chunks and bread cubes. Pour in the apple juice. Stir to completely combine all the ingredients.
    • Bake ~ Pour the pineapple mixture into an ovenproof dish. Bake until set and golden brown.

    • Mix the ingredients well ~ Make sure the wet ingredients along with the light brown sugar, nutmeg and kosher salt are well mixed. After adding the pineapple and bread cubes and apple juice, be sure to completely moisten the ingredients.
    • Pick a rustic loaf of bread ~ The best bread for the recipe is a rustic one like ciabatta or baguette. You want a sturdy bread that will hold its shape even after adding the liquid ingredients.

    Ingredients 

    • 8 tablespoons salted butter melted and cooled slightly
    • 2 large eggs beaten
    • ¼ cup light brown sugar
    • ¼ teaspoon nutmeg
    • pinch of kosher salt
    • ½ fresh pineapple cut in 1 inch cubes, about 2 cups
    • 4 cups cubed rustic bread cut in 1 inch pieces
    • ½ cup apple juice

    Instructions

    • Preheat oven to 375 degrees F.
    • In a large bowl, add the melted butter, beaten eggs, light brown sugar, nutmeg, and kosher salt. Stir to combine.
    • Add the pineapple chunks, bread cubes, and apple juice. Stir to thoroughly moisten the bread and combine all the ingredients.
    • Put the pineapple mixture into a 1 ½ quart baking dish.
    • Bake for 30 to 35 minutes. The pineapple bread pudding should be bubbly and golden brown.
    • Serve warm or at room temperature.
