Description

Fresh Pineapple Bread Pudding. This side dish is both savory and sweet and is an easy to make recipe. It has only a handful of ingredients including fresh pineapple, bread, eggs, butter, brown sugar, nutmeg, kosher salt, and apple cider. Serve along side baked ham, roasted pork, and barbecue chicken.


Ingredients

  • 8 tablespoons salted butter, melted and cooled slightly
  • 2 large eggs, beaten
  • 1/4 cup light brown sugar
  • 1/4 teaspoon nutmeg
  • pinch of kosher salt
  • 1/2 fresh pineapple, cut in 1 inch cubes, about 2 cups
  • 4 cups cubed rustic bread, cut in 1 inch pieces
  • 1/2 cup apple juice

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, add the melted butter, beaten eggs, light brown sugar, nutmeg, and kosher salt. Stir to combine.
  3. Add the pineapple chunks, bread cubes, and apple juice. Stir to thoroughly moisten the bread and combine all the ingredients.
  4. Put the pineapple mixture into a 1 1/2 quart baking dish.
  5. Bake for 30 to 35 minutes. The pineapple bread pudding should be bubbly and golden brown.
  6. Serve warm or at room temperature.

Notes

  • Mix the ingredients well ~ Make sure the wet ingredients along with the brown sugar, nutmeg and kosher salt are well mixed. After adding the pineapple and bread cubes, be sure to completely moisten the ingredients.
  • Grab a can of pineapple ~ If fresh pineapple is not available, substitute a 20 ounce can of pineapple chunks.
  • Pick a rustic loaf of bread ~ The best bread for the recipe is a rustic one like ciabatta or baguette. You want a sturdy bread that will hold its shape even after adding the liquid ingredients.
