It's a super quick and delicious way to prepare shrimp. And it can be used in oh so many appetizer and entrée dishes. The mellow, slightly salty tasting shrimp get a boost of flavor from Parmesan cheese, garlic powder, dried thyme, dried oregano, kosher salt, and red pepper flakes. A quick roast in the oven produces scrumptious shrimp that will find their way onto your dinner table over and over again.
Serve with a dipping sauce as an appetizer, over greens for a tasty salad, or toss with pasta with an easy and delicious dinner.

- Prep the baking sheet: Preheat the oven and place a large rimmed baking sheet on the middle rack.
- Season the shrimp: Drizzle the shrimp with the extra virgin olive oil and toss with Parmesan cheese, dried thyme, garlic powder, dried oregano, kosher salt, and red pepper flakes.
- Roast the shrimp: Carefully remove the hot baking sheet from the oven and add the shrimp to it in a single layer. Roast in the oven.
- Serve the shrimp: Remove the shrimp from the oven and serve.

- Frozen shrimp are good: Most shrimp that are labeled "fresh" at the grocery store were most likely frozen and then thawed. And who knows how long that shrimp has been sitting in the fish case. Grab a frozen bag of shrimp as they will cook and taste better.
- Preheat the baking sheet: For the best results, I like to sear shrimp at a high temperature. To achieve this in the oven, preheat the baking sheet. When the hit the hot baking sheet, they will start to cook immediately. The result is juicy and tender shrimp.
- Are the shrimp cooked?: Shrimp are cooked when they are pink and firm to the touch.

This roasted shrimp is a little different than the usual shrimp recipe. Instead of boiling or sauteing the shrimp, roast it in the oven. Tossed with Parmesan, Italian spices, and garlic powder adds a punch of flavor to the tender shrimp.
I am a fan of dipping sauces and love to serve these roasted shrimp as a twist on the traditional shrimp cocktail. Serve the shrimp along side either a cool and refreshing Tzatziki Sauce or a warm tomatoey Marinara Sauce with Fresh Basil. The sauces compliment the flavor of the nutty Parmesan cheese and earthy garlic roasted shrimp.

Ingredients
- 2 pounds extra large shrimp (21 to 25 per pound), peeled and deveined
- 3 tablespoons olive oil
- ยฝ cup grated Parmesan cheese
- 2 teaspoons dried thyme
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- ยฝ teaspoon kosher salt
- ยผ teaspoon red pepper flakes
- Tzatziki Sauce, Homemade Marinara Sauce or store bought for serving
Instructions
- Prep the baking sheet: Preheat the oven to 400 degrees F. Place a large rimmed baking sheet on the middle rack of the oven.
- Season the shrimp: In a large bowl add the shrimp. Drizzle with the extra virgin olive oil and toss to coat. Add the Parmesan cheese, dried thyme, garlic powder, dried oregano, kosher salt, and red pepper flakes. Toss to thoroughly coat the shrimp with all the ingredients.
- Roast the shrimp: Carefully remove the hot baking sheet from the oven and place the shrimp on it in a single layer. Roast in the oven for 6 to 8 minutes or until the shrimp are cooked. They should be pink and firm to the touch.
- Serve the shrimp: Remove the shrimp from the oven. Place the shrimp on a platter and serve with Tzatziki Sauce or Marinara Sauce.
