This 30 minute pork tenderloin with mango salsa recipe is an explosion of savory, sweet, salty, and spicy flavors. Perfectly roasted and juicy pork tenderloin pairs deliciously with tropical sweet mango salsa with a kick of heat from jalapenos. This is an easy and amazing dinner for any night of the week.

When a dinner recipe is ready in 30 minutes, I’m always giving it a try. And if it includes fresh ingredients and a homemade spice rub, it’s got to be amazing.

Not only is this easy entrée recipe delicious, but it’s really pretty too. My Mom always said, “the eye eats first.”

Pork and fruit are a classic and winning combination. And this sweet and spicy roasted pork tenderloin is perfect along side the cool and crunchy mango salsa. It’s the melding of savory, spicy, salty and sweet flavors that makes this recipe so good.

And I love that the mango salsa is super tasty with tortilla or pita chips too!

  • Pork and fruit are a classic combination. Chicken breasts are an alternative. After searing, bake until it has an internal temperature of 165 degrees F on a digital thermometer.
  • Mangoes can be tricky to cut. Thawed frozen mango can be used in its place.

Preheat the oven. Rub the pork tenderloin with Dijon mustard and brown sugar.

Make the easy spice mixture with chili powder, smoked paprika, onion powder, garlic powder, kosher salt and pepper. Rub it on the pork.

Grab a cast iron skillet or an oven safe large sauté pan. Over medium high heat, sear the pork tenderloin until golden brown on all sides.

Place the skillet or sauté pan in the oven. Roast the pork until the internal temperature is 145 degrees on a digital thermometer. Remove from the oven and let rest.

Make salsa while the pork cooks. Combine the mango, cucumber, red bell pepper, red onion, jalapeno, parsley, olive oil and lime juice. Season to taste with kosher salt and pepper.

Slice the pork tenderloin into medallions. Drizzle with any of the accumulated pan juices. Serve with the salsa.

Take the pork tenderloins out of the refrigerator at least 30 minutes before you start to cook. By removing the chill, the pork will cook more evenly and quickly.

Don’t skip the step of searing the tenderloins before roasting them. Not only does it add beautiful golden color, it also makes for a nice smoky crust on the pork.

Let the pork rest about 5 to 10 minutes before slicing it into medallions. This will redistribute the juices throughout the meat. The heat of the pan will continue to cook the pork. Make sure to remove the pork from the cast iron skillet or sauté pan.

For a less spicy salsa, remove the seeds and ribs of the jalapeno before adding it.

Yes! For the juiciest and most flavorful pork tenderloin, sear it before finishing the cooking in the oven. Searing pork tenderloin adds beautiful color. It also adds a smoky flavor.

Completely cool the pork tenderloin before storing it in the refrigerator. Package it and mango salsa in separate air tight glass containers. Alternately tightly wrap the pork in plastic wrap, foil or pop in a resealable bag. Both the pork and salsa will stay fresh up 4 days in the fridge.

Either reheat the pork tenderloin in the microwave or oven. Heat covered on 60 percent microwave power at 30 to 45 second intervals. Warm in a 325 degree F oven in a covered dish for about 10 to 15 minutes. Add a couple tablespoons of chicken stock or water to the dish to help keep the pork juicy.

Description

Ingredients

  • 2 tablespoons Dijon mustard
  • 2 tablespoons light brown sugar
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 2 (1 pound) pork tenderloins

for the mango salsa

  • 2 cups diced mango
  • 1/2 cup diced cucumber
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1 small jalapeno, diced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon olive oil
  • juice of 1/2 lime
  • lime, sliced for serving

Instructions

  1. Preheat oven to 425 degrees F.
  2. Place the pork tenderloin on a work surface and rub with Dijon mustard and brown sugar.
  3. In a small bowl, combine chili powder, smoked paprika, onion powder, garlic powder, kosher salt and pepper. Rub the pork with the spice mixture.
  4. Heat a cast iron skillet or an oven safe large sauté pan over medium high heat. Add 1 tablespoon of olive oil. When the oil begins to shimmer, add the seasoned pork tenderloin. Brown on all sides, about 2 to 3 minutes per side.
  5. Place the skillet or sauté pan with browned pork tenderloins in the oven. Roast in for about 10 to 15 minutes. The cooking time will depend on the size of the tenderloins. The pork is ready when the internal temperature is 145 degrees on a digital thermometer. Remove from the oven and let rest.
  6. While the pork is cooking, make the Mango Cucumber Salsa. In a bowl, combine the mango, cucumber, red bell pepper, red onion, jalapeno, parsley, olive oil and lime juice. Stir and season to taste with kosher salt and pepper. Set aside.
  7. Slice the pork tenderloin in 1 inch medallions and place on a platter. Drizzle with any of the accumulated pan juices and squeeze lime juice over the top. Serve with the Mango Cucumber Salsa.
