With tomatoes at their peak of flavor in the summer, this recipe is one I make all summer long. Along with these burgers with fresh tomato relish and this avocado corn salad are some of my favorite tomato recipes.
It's got all the flavors of a caprese salad with the beefsteak tomatoes, creamy mozzarella cheese, and fresh basil. Add grilled chicken drizzled with balsamic vinegar, roasted red peppers and toasty roll for a sandwich that's super satisfying.
These chicken sandwiches are portable too. They're ideal for picnics, tailgate parties, and cookouts.

the ingredients and substitutions
With some simple seasonings and fresh ingredients these caprese chicken sandwiches aren't only delicious, they're a snap to make too.
- Boneless skinless chicken breasts ~ Try boneless skinless chicken thighs too.
- Kosher salt ~ The larger grain salt enhances the flavor of food without making it overly salty.
- Fresh ground black pepper ~ More flavorful than already ground pepper.
- Balsamic vinegar ~ The traditional vinegar adds richness to the chicken and acidity to the vegetables.
- Olive oil ~ Extra virgin olive oil is an alternative.
- Beefsteak tomatoes ~ Roma or tomatoes on the vine are alternatives.
- Fresh mozzarella ~ Skip the block mozzarella for this recipe.
- Roasted red peppers ~ Scroll down for my easy steps for roasting bell peppers. Or purchase a jar of roasted peppers at the store or online.
- Fresh basil leaves ~ Fresh is best!
- Toasted long rolls ~ Sturdy rolls such as kaiser or a long loaf of bread cut in 6 inch lengths are alternatives.

how to make roasted red peppers
Homemade roasted red peppers is my preference. But a good jarred version works in a pinch. Roasting fresh red peppers takes about 10 minutes. The peppers have a lovely charred and smoky taste but, with a hint of freshness.
Char the whole, washed and dried peppers over a gas stove top burner or broil in the oven. Rotate them as the blacken so all sides of the pepper is charred.
Put the charred peppers in a bowl and cover with plastic wrap for 15 minutes. When the peppers are cool enough to handle, peel off the charred skin.
Slice in half and cut out the core and remove the seeds. The roasted peppers are ready to use. The drizzle the peppers with olive oil and store in the refrigerator for up to 5 days.

Heat a grill or grill pan. Drizzle the chicken olive oil and season with salt and pepper. Grill for about 3 to 4 minutes per side or until cooked through.
Remove from grill and place in a shallow dish. Drizzle with olive oil and balsamic vinegar.
For each sandwich, drizzle a little olive oil and balsamic vinegar on the each side of the roll. Top with the grilled chicken. Layer tomato, mozzarella, some roasted red pepper, and basil leaves. Top the the other half of the roll.
Slice in half and serve.
Hint 1: Buy or slice thin chicken cutlets for the sandwiches. They cook up super quick so preparing grilled chicken sandwiches is a breeze.
Hint 2: Sandwiches are defined by their bread. Look for rolls that are slightly crisp on the outside and soft yet firm on the inside. You want the rolls to hold their own against the delicious sandwich filling. A little toasting adds the crunch you are looking for too.

Most definitely! Prep all the ingredients ahead of time. Grill the chicken, slice the tomatoes and mozzarella. Roast the red peppers. Store in the ingredients in meal prep containers in the refrigerator.
Build the sandwiches right before serving. You can also assemble the chicken sandwiches in advance. Wrap them in parchment paper or plastic wrap. Store in the refrigerator for up to 4 hours.
If you don't have a grill or grill pan, either sauté or bake the chicken. In a large sauté pan, cook the chicken for 3 to 4 minutes per side. Alternately, bake the chicken in a 400 degree F oven for 10 to 15 minutes.
