A Grilled Balsamic Chicken Caprese Sandwich with Fresh Mozzarella, Roasted Red Peppers and Tomato reminds me of summer anytime of the year. With all the flavors of a caprese salad, the grilled chicken and toasty roll put this sandwich over the top.

Why do I love this bright and fresh tasting sandwich? Prep its ingredients in advance for no fuss sandwich making.

  • Grilled chicken
  • Kosher salt and freshly ground pepper
  • Balsamic vinegar
  • Extra virgin olive oil
  • Beefsteak tomatoes
  • Fresh mozzarella
  • Roasted red peppers
  • Fresh basil leaves
  • Toasted long rolls

Prep all the ingredients ahead of time. Grill the chicken, slice the tomatoes and mozzarella. Roast the red peppers. Store in containers in the refrigerator and build the sandwiches right before serving. They can also be assembled in advance (up to a few hours & stored in the fridge) and wrapped in parchment paper or plastic wrap.

how to make roasted red peppers from scratch

Homemade roasted red peppers is definitely my preference but, a good jarred version works in a pinch. Roasting fresh red peppers does not take much time at all and makes all the difference in delicious flavor. The peppers have a lovely charred and smoky taste but, with a hint of freshness.

Just char the whole, washed and dried peppers over a gas stove top burner or broil in the oven. You’re looking for the skin of the peppers to be totally blackened. Rotate them as the blacken so all sides of the pepper is charred. Then put them in a bowl and cover with plastic wrap. In about 15 minutes the peppers are cool enough to handle and the charred peel slides right off. Slice in half and cut out the core and seeds and they are ready to use. The peppers, drizzled with a little olive oil, can be made in advance and refrigerated for a few days. You can also use the broiler to to roast peppers. Check out this recipe for the how to.

  • Buy or slice thin chicken cutlets for the sandwiches. They cook up super quick so preparing grilled chicken sandwiches is a breeze.
  • Buy the freshest ingredients available. The chicken mozzarella sandwich has few ingredients so using the freshest and best ingredients are keys to success.
  • Season often. Chicken, fresh mozzarella, roasted red peppers and tomatoes all can use a little kosher salt and freshly ground pepper to enhance their delicious flavors.
  • Sandwiches are defined by their bread. Look for rolls that are slightly crisp on the outside and soft yet firm on the inside. You want the rolls to hold their own against the delicious sandwich filling. A little toasting adds the crunch you are looking for too.

Simple seasonings of kosher salt, freshly ground pepper, extra virgin olive olive oil and balsamic vinegar are always on hand. The fresh ingredients including mozzarella, red peppers, tomatoes and basil are what make this sandwich a hit. They are super satisfying without leaving you feeling overstuffed.

Description

Grilled chicken is simply seasoned and stacked with beefsteak tomatoes, creamy fresh mozzarella, smoky roasted red peppers, leafy basil and a drizzle of balsamic vinegar and olive oil. Straightforward ingredients make for a delicious sandwich.


Ingredients

Scale
  • 2 pounds thin chicken cutlets
  • Kosher salt
  • Freshly ground pepper
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 large tomatoes, sliced
  • 1 large ball of fresh mozzarella, about 1 pound, sliced
  • 2 roasted red peppers, sliced or 1 (12 ounce) jar 
  • 12 large fresh basil leaves
  • 4 long rolls, split and toasted (6 inches long each)

Instructions

  1. Heat a grill or grill pan to medium high heat. Drizzle the chicken olive oil and season with salt and pepper.
  2. Grill for about 3 to 4 minutes per side or until cooked through.
  3. Remove from grill and place in a shallow dish. Drizzle with olive oil and balsamic vinegar.
  4. For each sandwich, drizzle a little olive oil and balsamic vinegar on the each side of the roll. Top with the grilled chicken. Layer the tomato, mozzarella, roasted red pepper, and basil leaves on top. Top the the other half of the roll.
  5. Slice in half and serve.
