Start the weekend off right with this DELICIOUS Blueberry Croissant French Toast Casserole. This recipe is so easy to toss together. Bake buttery croissants in a cinnamon, maple, and vanilla custard that’s dotted with fresh blueberries. This one is a favorite breakfast!!

why I love a croissant French toast casserole

I recently whipped up a new and DELICIOUS blueberry croissant French toast casserole. With enough to feed hungry 12 people, this light and cinnamony French toast bake with fresh blueberries is a hit with everyone!

The breakfast casserole has just a touch of sweetness. It’s not one of those overly sticky sweet breakfasts. But if that’s what you are after, by all means be generous when drizzling maple syrup on top of the light and fluffy French toast squares.

  • salted butter
  • large eggs
  • half and half or whole milk
  • vanilla extract
  • cinnamon
  • maple syrup
  • kosher salt
  • croissants
  • blueberries
  • powdered sugar for serving

how to make croissant French toast casserole

This BIG breakfast is super easy to make. Butter a 9 x 13 inch baking pan. Whip up a custard with eggs, half and half, vanilla extract, cinnamon, maple syrup and a pinch of kosher salt.

Tear croissants into large pieces and tuck them into the prepared baking dish. Sprinkle fresh blueberries over the croissants and pour the custard over the top. Gently press down on the croissants so they absorb the liquid. Dot with more butter.

Pop the baking dish into a 375 degree F oven for 30 to 40 minutes. Serve this croissant French toast bake dusted with powdered sugar and drizzled with maple syrup.

recipe suggestions and tips

  • The recipe calls for half and half. Whole milk, light cream or even heavy cream are good substitutes.
  • I use mini croissants in the recipe, but not all grocery stores carry these cute mini rolls. Full size croissants are perfect for the French toast casserole too. I love to use my kitchen scale for accurate measuring so about 1 pound of croissants (either full size or mini) is ideal for the recipe.
  • During the summer months, fresh blueberries are plentiful. Strawberries, raspberries, or blackberries are delicious in the breakfast casserole too. Feel free to use frozen fruit if fresh fruit isn’t available.

can you freeze cooked French toast casserole?

Most DEFINITELY! This is one of those breakfast casseroles that tastes just as good even after being frozen. Just cut the casserole in individually servings ~ this makes it so easy to just grab one to reheat ~ and freeze in glass containers or plastic ones too. When ready to serve, thaw overnight in the refrigerator. Then warm in the microwave on 70% power for 30 to 45 seconds.

Also, this awesome blueberry croissant French toast casserole can be heated from frozen. Heat in the microwave on 70% power for 30 second intervals until heated through.

what goes with blueberry French toast casserole?

Of course bacon or breakfast sausages are fabulous sides for the casserole. Also serve a big fruit salad with watermelon, cantaloupe, and strawberries. Try some of the following which are FAVORITE BREAKFASTS AND SIDES at our house.

Blueberry Croissant French Toast Casserole

Description

Start the weekend off right with this DELICIOUS croissant French toast casserole. This recipe is so easy to toss together. Bake buttery croissants in a cinnamon, maple, and vanilla custard that’s dotted with fresh blueberries. This one is a favorite breakfast!!


Ingredients

Units Scale
  • 4 tablespoons salted butter, divided
  • 8 large eggs
  • 2 cups half and half
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 3 tablespoons maple syrup plus more for serving
  • pinch of kosher salt
  • 8 croissants or 32 mini croissant, torn in large pieces
  • 1 cup fresh blueberries
  • powdered sugar for serving

Instructions

  1. Preheat oven to 375 degrees F. Grease a 9 x 13 inch baking pan with 2 tablespoons of the salted butter. Set aside.
  2. In a 1 quart measuring cup or bowl, add the eggs, half and half, vanilla extract, cinnamon, maple syrup, and pinch of kosher salt. Use a whisk the beat the custard mixture until combined. Set aside.
  3. Place the pieces of croissants in the prepared baking dish. Sprinkle the blueberries on top of the croissants. Carefully pour the custard over the croissants. Press down lightly so the croissants absorb the liquid. Dot the top of the casserole with the remaining 2 tablespoons of butter.
  4. Bake for 30 to 40 minutes in the oven. The top of the casserole should be golden brown and spring back when lightly touched.
  5. Dust with powdered sugar and cut into 12 pieces.
  6. Serve with maple syrup and dusted with powdered sugar.
