why I love this salmon sheet pan dinner recipe

For starters, I love that all the ingredients cook on one sheet pan and clean up a breeze. No fancy equipment or special ingredients are needed. Spending more time eating and relaxing are way more fun than washing dishing.

This salmon sheet pan dinner is loaded with savory and sweet flavors. A double duty maple mustard marinade marinates the salmon. And it's drizzled over the Brussels sprouts, sweet potatoes and red onion to add more delicious flavor.

This salmon sheet pan dinner recipe is one of the easiest and tastiest ways to cook salmon. And while dinner is baking, it's the perfect time for you to pour a glass of wine for yourself.

substitutions and additions

  • Instead of salmon, try halibut, cod, artic char or haddock. All cook in about the same amount of time as salmon.
  • Substitute other vegetables for the Brussels sprouts such as cauliflower, carrots, green beans, broccoli or asparagus. If using green beans, broccoli or asparagus, add them along with the fish. They have a shorter cooking time than Brussels sprouts.
  • Yellow or white onions are an alternative for the red onions.

A large baking sheet pan (or half sheet pan) is typically 18 inches by 12 inches and is indispensable in the kitchen. I love it for making dinner in a single pan.

Preheat the oven and place a large baking sheet on the middle rack.

Next combine maple syrup, Dijon mustard, and soy sauce for the marinade. Place salmon in a resealable bag and add half of the maple syrup mixture. Set other half of mixture aside.

Start the vegetables cooking first. Toss the sweet potatoes, Brussels sprouts and red onions with the olive oil and season with salt and pepper. Add to the preheated baking sheet and bake until half way cooked.

Remove the pan from the oven. Add the salmon and sprinkle with Old Bay seasoning. Toss the fish marinade.

Grab the reserved maple mustard mixture and drizzle over the vegetables. Return the pan to the oven.

Bake until the potatoes are soft, the Brussels sprouts are slightly charred and the fish is just cooked through. The salmon should have an internal temperature of 145 degrees F on a digital thermometer.

Remove from oven, sprinkle with scallions and serve.

  • Preheat the baking sheet along with the oven. This will prevent the vegetables from sticking to the pan while baking.
  • Use pieces of salmon that are the same thickness so they bake at the same rate.
  • For moist and delicious salmon, cook it to an internal temperature of 145 degrees F. A quick reading digital thermometer is handy for checking the temp.

Maple Salmon Sheet Pan Dinner with Sweet Potatoes and Brussels Sprouts

Equipment

Ingredients 

  • ½ cup maple syrup
  • 3 tablespoons Dijon mustard
  • 2 tablespoons reduced sodium soy sauce
  • 4 6-ounce salmon fillets, skin removed
  • 2 tablespoons olive oil
  • 1 pound of sweet potatoes sliced in ½" slices
  • 1 pound of Brussels sprouts trimmed and halved if large
  • 1 medium red onion sliced
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • Old Bay seasoning
  • 2 scallions thinly sliced

Instructions

  • Preheat oven to 425 degrees F. Place a large baking sheet in the oven.
  • In a small bowl combine maple syrup, Dijon mustard, and soy sauce.
  • Place salmon in a resealable bag and add half of the maple syrup mixture. Set other half of mixture aside.
  • Allow salmon to marinate while the sweet potatoes and Brussels sprouts bake.
  • In a large bowl, toss the sweet potatoes, Brussels sprouts and red onions with the olive oil and season with salt and pepper.
  • Remove the pan from the oven and spread out the vegetables on it.
  • Place the pan to the oven and bake for 15 minutes.
  • After the vegetables bake for 15 minutes, remove the pan from the oven.
  • Take the salmon out of the resealable bag and place on top of vegetables. Discard the marinade. Sprinkle the salmon generously with Old Bay seasoning.
  • Pour the reserved maple syrup mixture on top of vegetables and return the pan to the oven.
  • Bake for an additional 15 to 20 minutes or until the potatoes are soft, the Brussels sprouts are slightly charred and the salmon is just cooked through. The salmon should have an internal temperature of 145 degrees F on a digital thermometer.
  • Remove from oven, sprinkle with scallions and serve.

    Absolutely delicious! We used some acorn squash instead of sweet potatoes, because that's what I had on hand. Love the flavor combination and good umami tastes.
