Instructions
Preheat oven to 425 degrees F. Place a large baking sheet in the oven.
In a small bowl combine maple syrup, Dijon mustard, and soy sauce.
Place salmon in a resealable bag and add half of the maple syrup mixture. Set other half of mixture aside.
Allow salmon to marinate while the sweet potatoes and Brussels sprouts bake.
In a large bowl, toss the sweet potatoes, Brussels sprouts and red onions with the olive oil and season with salt and pepper.
Remove the pan from the oven and spread out the vegetables on it.
Place the pan to the oven and bake for 15 minutes.
After the vegetables bake for 15 minutes, remove the pan from the oven.
Take the salmon out of the resealable bag and place on top of vegetables. Discard the marinade. Sprinkle the salmon generously with Old Bay seasoning.
Pour the reserved maple syrup mixture on top of vegetables and return the pan to the oven.
Bake for an additional 15 to 20 minutes or until the potatoes are soft, the Brussels sprouts are slightly charred and the salmon is just cooked through. The salmon should have an internal temperature of 145 degrees F on a digital thermometer.
Remove from oven, sprinkle with scallions and serve.

Notes
Preheat the baking sheet along with the oven. This will prevent the vegetables from sticking to the pan while baking to a delicious golden brown.
Use pieces of salmon with even thickness so they bake at the same rate.
Cook salmon to an internal temperature of 145 degrees F. A quick reading digital thermometer is handy for checking the temps of many foods.
