Sheet pan dinners are high on my list of favorite recipes to make. Speedy prep, quick cooking times, and easy cleanup are all pluses of the one pan recipes. And when it is as delicious as this everything bagel chicken sheet pan dinner with baby potatoes and asparagus, you just can’t go wrong.

what is a sheet pan dinner recipe?

A sheet pan dinner recipe is a complete meal made on a single baking sheet. The recipe typically includes a protein such as chicken, steak, pork, fish, beans or tofu along with vegetables and seasonings. The whole meal cooks in the oven.

The ingredients that take the longest to cook, such as potatoes, go in the oven first. Quicker cooking ingredients, such as asparagus and chicken tenderloins, are then added many times with seasonings (like the awesome everything bagel seasoning). Everything cooks a delicious golden brown and the chicken sheet pan dinner is ready.

Every day ingredients that are readily available at the grocery store make up this easy chicken sheet pan dinner recipe. The chicken tenderloins are tops on my list for quick dinners because they are juicy, tender and cook up lickety split.

what does everything bagel seasoning have in it?

Everything bagel seasoning is a spice blend phenomenon. It’s a crunchy, salty, garlicky mixture of poppy seeds, toasted sesame seeds, dried garlic and onion and coarse salt. It has made its name as a popular bagel topping.

The seasoning has so much culinary potential that it should be more than just a bagel topper. Here’s how to make a homemade batch of everything bagel seasoning at home.

Combine the following and keep in an air tight container for up to 6 months.

  • 2 tablespoons poppy seeds
  • 2 tablespoons white and black sesame seeds
  • 1 tablespoon plus 1 teaspoon dried minced garlic
  • 1 tablespoon plus 1 teaspoon dried minced onion
  • 2 teaspoons kosher salt

Make a double batch of the versatile seasoning. Use it in cooking breakfast, lunch and dinner and even for snacks. Stir into mashed potatoes or rice, sprinkle on steamed broccoli or green beans, whisk into scrambled eggs, or sprinkle on hot buttered popcorn.

suggestions and recipe tips

  • Purchase tiny new or baby potatoes for this recipe. They’re an inch or so across and bake to creamy bites of goodness.
  • Chicken tenderloins are my first choice for this recipe. Perfectly portioned, juicy and tender, they cook in about half the time of boneless, skinless chicken breasts. Chicken breasts cut into 1 by 2 inch strips is a suitable substitute.
  • Evenly coat the chicken tenderloins with the Parmesan mayo mixture. This makes the chicken extra tender and cheesy.
  • Trim off the woody ends of the asparagus (usually a 2 to 3 inch portion on the ends) as they are tough and chewy.
  • Use a digital thermometer to check when the chicken is done. It should read 165 degrees F.

Description

Everything Bagel Chicken Sheet Pan Dinner with roasted potatoes and lemon asparagus is an all-in-one recipe brimming with amazing flavors. Cleanup is a breeze with this complete dinner all on one sheet pan.


Ingredients

Units Scale
  • 1 pound new or small potatoes
  • Olive oil
  • Kosher salt
  • Pepper
  • 3/4 cup mayonnaise
  • 1/2 cup finely shredded Parmesan cheese
  • 2 pounds of chicken tenderloins
  • 1 pound asparagus, washed and the ends trimmed
  • 1 lemon, cut in 1/2 with 1 of the halves thinly sliced
  • Everything bagel seasoning * purchased or see the recipe in the Notes

Instructions

  1. Preheat oven to 400 degrees. Place a large rimmed baking sheet in the oven while it preheats.
  2. As soon as the oven is preheated, remove the baking sheet from the oven. Add the potatoes. Drizzle with about 1 tablespoon of olive oil and season with kosher salt and pepper. Return the pan to the oven and bake for 15 minutes.
  3. In a small bowl, mix together the mayonnaise and Parmesan cheese. Spread the mixture on one side of each of the chicken tenderloins. Set aside.
  4. Remove the potatoes from the oven after the 15 minutes of baking. 
  5. Move the potatoes to the outer edges of the baking sheet.
  6. Add the asparagus to the center of the baking sheet. Drizzle with about 1 tablespoon olive oil, squeeze the 1/2 lemon over the top, and season with kosher salt and pepper. 
  7. Place the chicken tenderloins on top of the asparagus and season with the everything bagel seasoning. Place the lemon slices around the baking sheet.
  8. Return the baking sheet to the oven and back an additional 15 minutes. 
  9. After the 15 minutes, turn the oven to broil. Broil for about 5 minutes. The topping on the chicken should begin to brown and the internal temperature should be 165 degrees F.
  10. Remove the pan from the oven and serve.

Notes

Recipe for everything bagel seasoning~

  • 2 tablespoons poppy seeds
  • 2 tablespoons white and black sesame seeds
  • 1 tablespoon black sesame seeds
  • 1 tablespoon plus 1 teaspoon dried minced garlic
  • 1 tablespoon plus 1 teaspoon dried minced onion
  • 2 teaspoons kosher salt

Combine the ingredients in a small bowl. Can be stored in a container with a tight fitting lid for up to 6 months.
