mixing turkey meatloaf with mushrooms in a bowl and a baked meatloaf

This is an unbelievably tender and loaded with flavor Turkey Meatloaf with Mushrooms recipe. A lighter version of the classic beef meatloaf, this juicy and delicious meatloaf gets a boost in umami flavor from cremini mushrooms.

Ground turkey is so versatile. My personal chef clients love it. I use it in some of their favorite recipes like Thai Turkey Meatball Curry, Turkey Sloppy Joe Stuffed Potatoes, and this meaty and savory turkey meatloaf with mushrooms.

why I love turkey meatloaf with mushrooms

There is just something about a delicious homemade meatloaf. It's like a big warm hug of homemade goodness. Meatloaf is one of the #1 requests of my personal chef clients. And this turkey meatloaf with mushrooms is one my clients love when they are looking for a lightened up version of of traditional ground beef meatloaf.

Even if you aren't a mushroom fan, you will love this meatloaf. The finely chopped mushrooms (use a food processor to do the work for you) melt right into the meatloaf as it bakes. They add umami flavor or the essence of deliciousness to the turkey meatloaf.

the ingredients

Ground turkey can be a little bland. Each of the ingredients in this savory meatloaf adds to its deliciousness. One of the key ingredients, cremini mushrooms, adds the meaty and savory taste that deepens the flavor of the turkey meatloaf.

  • cremini mushrooms ~ my first choice, but you can use white button mushrooms too.
  • onion
  • celery
  • garlic
  • ground turkey
  • seasoned bread crumbs
  • large egg
  • ketchup
  • Worcestershire sauce
  • kosher salt
  • pepper

suggestions and tips

Using these cooking tips can help ensure a delicious, flavorful, tender, and juicy turkey meatloaf every time.

  • Finely chop the mushroom, onion, and celery. They add moisture to the meatloaf. A food processor makes quick work of this task.
  • Skip the extra lean ground turkey for this recipe. Lean ground turkey (usually 93% lean) will add the needed fat for a tasty meatloaf.
  • Add flavor and moisture to the turkey meatloaf by including egg, ketchup, and Worcestershire sauce.
  • Don't overmix the ingredients. This results in a dense and heavy meatloaf.
  • Use a digital thermometer to cook the turkey meatloaf to 165 degrees F. Overcooking leads to a dry and tasteless meatloaf.
  • Bake the meatloaf on a foil lined baking sheet and not in a loaf pan. The meatloaf will steam in the loaf pan and will not have the smoky caramelized edges that are so flavorful.

how to make an easy homemade gravy

Are you a gravy lover? It takes just a few minutes to make a rich and herby gravy for homemade meatloaf.

In a small saucepan, melt 1 tablespoon butter over medium heat. Add 1 tablespoon flour and stir to combine. Cook for about 1 minute. Slowly whisk in 1 cup of chicken stock. Continue cooking for 3 to 5 minutes or until the desired thickness. Stir in some chopped fresh parsley. Season to taste with kosher salt and pepper.

If you are not a gravy fan, pour about ¼ cup of warm chicken stock over the sliced meatloaf to make it extra juicy and tasty. This will also keep any leftovers fresh testing after they are reheated.

Loved it! I used ground chicken and added a little Parmesan cheese as well as a half of a jalapeño. I did add a ketchup/mustard topping for the last 15 minutes. Very flavorful!

I just made this and it came out excellent. I omitted the garlic and half the onion because I’m sensitive to alliums. It’s rare to find a meatloaf recipe without glaze, I’m not a big fan of the sweetness. Overall winner!

Beginning to look around for variety in the family's 'dinner dish' rotation and I think we hit the JACKPOT!

Healthier than beef or pork, just as tasty, and certainly a cheaper alternative...I substituted Japanese BBQ sauce for ketchup and that smoothly complimented the Worcestershire flavoring...excellent recipe, kiddo! Thanks for sharing!!

Thanks for the comment Eric. I love that you used Japanese BBQ sauce for the ketchup - what a great flavor addition. I'm so glad you enjoyed my recipe. I hope you try more of them.

What can be used in place of ketchup. We don't use ketchup.

You can use tomato sauce in place of the ketchup. And I would add 1 more tablespoon of Worcestershire sauce.
