pizza made on a tortilla with ham and pineapple

This easy, delicious, and crispy tortilla pizza was born out of necessity. When I was a young mom of 3 little kids (that was 20 years ago but, who’s counting :), I needed effortless and quick recipes that everyone loved. Pizza was always a winner in our house. So a version that is ready in less than 15 minutes was godsend during harried lunch and dinner times.

But a tortilla for a pizza crust? You may be questioning how a flour tortilla can stand in for the traditional yeast crust pizza. In a hot oven ~ 500 degrees F ~ a tortilla crust crisps up beautifully. When you take the first bite, you will swear it’s a regular thin crust pizza.

Occasionally a tortilla pizza or 2 are made when I’m cooking for my personal chef clients. Pint-sized family members are frequently perched on stools at the counter watching me prepare the family’s meals. I serve up a tortilla pizza with a crisp crackerlike crust and cheese, and my little friend is over the moon happy.

Let’s get cooking and make Hawaiian Tortilla Pizzas!

what are the ingredients for a Hawaiian tortilla pizza

This ingredients for a Hawaiian tortilla pizza are the perfect combination of sweet and savory. It’s sauce is a little sweeter than the standard pizza thanks to a touch of barbecue sauce. Salty ham and crispy bacon are balanced by the sweet fresh pineapple. Monterey Jack cheese is the ultimate melting cheese. It adds a slightly nutty distinctive flavor. It’s like a milder cheddar cheese. Slivers of red onion add pretty color and a nice bite.

chef tips for making tortilla pizzas

  • I use large flour tortillas (10-inch ones), but smaller ones work just as well. Just add less of the toppings.
  • A pizza stone is my first choice for baking tortilla pizzas. I love my pizza stone! It heats up super hot so the tortillas are extra crispy crunchy. Just be sure to preheat the stone along with the oven. If you do not have a pizza stone, preheat your baking sheet in the oven for 10 to 15 minutes before adding the pizza. I have also baked tortilla pizzas in the oven on a cast iron griddle.
  • Make a batch of homemade marinara sauce to have on hand in the refrigerator. It is easy to make and tastes so much fresher than the store bought ones.
  • Shred the Monterey Jack cheese by hand. It has a much more cheesy fresh flavor than preshredded store bought cheeses. Also the packages of already shredded cheese contain an anti clumping ingredient which hinders the melting of the cheese.
  • Mozzarella is a delicious substitute for the Monterey Jack cheese.
  • Canned pineapple can stand in for the fresh pineapple.
  • After taking the pizza out of the oven, let it cool for a minute or two before cutting it. If the pizza is cut as soon as it comes out of the oven, the toppings tend to slide right off.

what are some tortilla pizza topping ideas

The possibilities are endless for tortilla pizza toppings. Some other combos to try….

  • fresh mozzarella and basil
  • pepperoni, sliced mushrooms, onions and mozzarella
  • cooked Italian sausage, pepperoni, olives, green peppers, and onions
  • broccoli, red peppers, onions, spinach, sliced mushrooms, and fresh mozzarella
  • prosciutto, arugula, and parmesan
  • roast beef, green peppers, onions, cheddar and mozzarella cheeses
  • cooked ground beef, 1000 island dressing, mozzarella, shredded lettuce, and pickles
  • just marinara and lots of mozzarella ~ kids love this one!
