a pizza made on a tortilla with ham, bacon and pineapple

A pizza with a tortilla crust? YES! Super easy to make and ready in less than 15 minutes too! Hawaiian Tortilla Pizza with Ham, Bacon, and Pineapple has a slightly spicy sauce, mild and creamy Monterey Jack cheese, and salty bacon all on a thin and crispy tortilla crust. A winning combination!

pizza made on a tortilla with ham and pineapple.

This easy, delicious, and crispy ham and pineapple tortilla pizza was born out of necessity. When I was a young mom of 3 little kids (that was 25 years ago but, who's counting :), I needed effortless and quick recipes that everyone loved. My Chicago style stuffed pizza was always a winner in our house. So a pizza that's ready in less than 15 minutes was godsend during harried lunch and dinner times.

But a tortilla for a pizza crust? You may be questioning how a flour tortilla can stand in for the traditional yeast crust pizza. In a hot oven ~ 500 degrees F ~ a tortilla crust crisps up beautifully. When you take the first bite, you will swear it's a regular thin crust pizza.

what's to love about a tortilla pizza

This ingredients for a ham and pineapple tortilla pizza are the perfect combination of sweet and savory. And a tortilla crust crisps up beautifully. When you take the first bite, you will swear it's a regular thin crust pizza.

    • The sauce is a little sweeter than the standard pizza thanks to a touch of barbecue sauce.
    • Salty ham and crispy bacon are balanced by the sweet fresh pineapple.
    • Monterey Jack cheese is the ultimate melting cheese. It adds a slightly nutty distinctive flavor. It's like a milder cheddar cheese.
    • Slivers of red onion add pretty color and a nice bite.

    ingredients and substitutions

    • 10-inch flour tortillas ~ My go-to tortilla is plain flour ones. Substitute whole wheat, or one of the many flavored tortillas. Smaller tortillas also work in the recipe.
    • olive oil
    • Italian herb blend ~ Make your own Italian spice blend with equal parts basil, oregano and thyme.
    • marinara sauce ~ My favorite homemade marinara or a good store bought one work in the recipe.
    • barbecue sauce ~ My simple barbecue sauce recipe is easy to make with everyday pantry ingredients. But in a pinch, pick up one of the many delicious store bought brands.
    • Monterey Jack cheese ~ Mozzarella is a tasty substitute.
    • ham ~ Thin sliced deli ham or cubed ham steaks are perfect for the pizza. Black Forest, Maple, Virginia and Honey hams are all favorite ones to use.
    • cooked bacon
    • fresh pineapple ~ Canned pineapple is an easy alternative.
    • red onion
    • fresh parsley

    recipe details

Start off by preheating the oven and place a pizza stone or baking sheet on the middle oven rack.

Next, grab a tortilla. Drizzle with olive oil and sprinkle with the Italian herb blend. Combine the marinara sauce and barbecue sauce and brush on the tortilla.

Spread the pizza with the cheese. Tear a slice of the ham into pieces and place randomly on the pizza. Sprinkle the bacon, pineapple, red onion, and another 2 tablespoons of the cheese on the pizza.

Slide the pizza onto the pizza stone or baking sheet and bake.

Take the ham and pineapple pizza out of the oven. Sprinkle with the parsley. Cool a couple minutes and cut into squares.

    suggestions and recipe tips

    • I love my pizza stone for baking tortilla pizzas. It heats up super hot making the tortillas extra crispy crunchy. Preheating the stone along with the oven is key to cracker like tortilla pizza crust. If you do not have a pizza stone, preheat your baking sheet in the oven for 10 to 15 minutes before adding the pizza. I have also baked tortilla pizzas in the oven on a cast iron griddle.
    • Shred the Monterey Jack cheese by hand. It has a much more cheesy fresh flavor than preshredded store bought cheeses. Also the packages of already shredded cheese contain an anti clumping ingredient which hinders the melting of the cheese.
    • After taking the pizza out of the oven, let it cool for a minute or two before cutting it. If the ham and pineapple pizza is cut as soon as it comes out of the oven, the toppings tend to slide right off.

    Description

A pizza with a tortilla crust? YES! Super easy to make and ready in less than 15 minutes too! Hawaiian Tortilla Pizza with Ham and Pineapple has a slightly spicy sauce, mild and creamy Monterey Jack cheese, and salty bacon ~ all on a thin and crispy tortilla crust.

    Notes

    • I use large tortillas (10-inch ones) but, smaller ones work just as well. Just add less of the toppings.
    • A pizza stone is my first choice for baking tortilla pizzas. I love my pizza stone! It heats up super hot so the tortillas are extra crispy crunchy. Make sure to preheat the stone for about 15 minutes. If you do not have a pizza stone, preheat your baking sheet in the oven for 10 to 15 minutes before adding the pizza. I have also baked tortilla pizzas in the oven on a flat griddle.
    • Make a batch of homemade marinara sauce to have on hand in the refrigerator. It is easy to make and tastes so much fresher than the store bought ones.
    • Shred the Monterey Jack cheese by hand. It has a much more fresh cheesy flavor than preshredded store bought cheeses. Also the packages of shredded cheese contain an anti clumping ingredient which hinders the melting of the cheese.
    • Mozzarella is a delicious substitute for the Monterey Jack cheese.
    • Canned pineapple can stand in for the fresh pineapple.
    • After taking the pizza out of the oven, let it cool for a minute or two before cutting it. If the pizza is cut as soon as it comes out of the oven, the toppings tend to slide right off.
