    Baked Shrimp with Feta and Tomatoes

    Here's a quick dinner that tastes like one you would order at your favorite seafood restaurant. Baked Shrimp with Feta and Tomatoes is ready in less than 30 minutes and has plenty of briny shrimp, salty feta, smoky fire roasted tomatoes and a crispy garlic panko topping.

    My husband and I love to go out to eat. But when we are looking to spend a quiet evening at home, I like to whip up a delicious and easy dinner.

    Seafood is tops on our list of favorites including Lemon and Garlic Butter Shrimp Scampi, Mussels Marinara, and Baked Salmon with a Creamy Coconut Sauce.

    This baked shrimp with feta and tomatoes dish has all the flavor of a restaurant quality dish without the added expense of dining out. When making a delicious entrée is so simple, it's just as easy to eat at home.

    Baked Feta and Tomato Shrimp is loaded with garlic panko crumbs, fire roasted tomatoes, jumbo shrimp, and salty feta cheese. The dish bakes in about 15 minutes too. With a loaf of crusty bread and a salad of mixed greens with balsamic vinaigrette, dinner is complete.

    My husband says that if this dish was on a restaurant menu, he would order it every time!

    With frozen shrimp readily available in many local markets and a couple pantry and refrigerator ingredients, your dinner will be on the table in less than 30 minutes.

    • salted butter

    • extra virgin olive oil
    • shrimp
    • kosher salt
    • pepper
    • canned fire roasted diced tomatoes
    • feta cheese
    • fresh basil

    • The vast majority of shrimp sold at the grocery store or fish market is frozen at sea. If there is shrimp in the display counter, it was most likely thawed frozen shrimp. To be on the safe side, pick up a bag of frozen shrimp and thaw it yourself. Scroll down for some tips on how to quickly and safely thaw shrimp.
    • There's no need to sauté the garlic in the butter. You just want to infuse the butter with the delicious garlicky flavor. After the butter melts and just starts to foam, turn off the heat and add the garlic. Give it all a good stir and let it sit for about a minute.
    • Fire roasted diced tomatoes are one of my go-to ingredients. Be sure to pick up a can at the grocery store. They add a fabulous smoky flavor to the baked shrimp and feta dish.

    how to thaw frozen shrimp

    "Fresh" shrimp at the grocery store of fish market is probably not fresh.

    Most shrimp is frozen at sea as soon as it is caught. So that shrimp you see in the fish counter is most likely thawed frozen shrimp. Who knows how long that shrimp has been on display. It's best to to pick up a bag or 2 of frozen shrimp and thaw it yourself.

    Place frozen shrimp in a large bowl and add cold water. Give the shrimp a good swish. Then just wait about 15 to 20 minutes and the shrimp should be ready to use.

    Drain, peel, and devein the shrimp. Place the peeled shrimp on a couple sheets to paper towels. It's best to cook with dry shrimp so the paper towels will soak up any excess water.

    Baked Shrimp with Feta and Tomatoes

    Description

    Here's a quick dinner that tastes like one you would order at your favorite seafood restaurant. Baked Shrimp with Feta and Tomatoes is ready in less than 30 minutes and has plenty of briny shrimp, salty feta, smoky fire roasted tomatoes and a crispy garlic panko topping.


    Ingredients

    Units Scale
    • 3 tablespoons salted butter
    • 4 garlic cloves, chopped
    • ½ cup plain panko
    • 2 teaspoons extra virgin olive oil
    • 2 pounds shrimp, 16 to 20 per pound, peeled and deveined
    • kosher salt
    • pepper
    • 1 (14.5 ounce) can fire roasted diced tomatoes
    • 1 cup crumbled feta cheese
    • 12 - 14 basil leaves, finely chopped

    Instructions

    1. Preheat oven to 450 degrees F.
    2. In a small saucepan over medium low heat, add the butter. When the butter has melted and just begins to foam, shut of the heat and add the garlic. Stir to coat the garlic with the melted butter. Let sit for 1 minute. Add the panko to the garlic butter and stir to coat. Set aside.
    3. Brush a 10 inch baking dish with the extra virgin olive oil.
    4. Add the shrimp in a single layer. Sprinkle with kosher salt and pepper.
    5. Layer the fire roasted diced tomatoes evenly on top of the shrimp.
    6. Sprinkle the feta cheese evenly over the tomatoes.
    7. Sprinkle the garlic butter panko evenly over the top of the tomatoes.
    8. Bake for 12 to 15 minutes or until the shrimp are cooked and the topping is golden brown.
    9. Remove from the oven and serve over pasta, with crostini, or alone.
