110 ounce package chopped spinach, thawed and drained
4slicesbaconcooked and chopped
½cupshredded cheese - cheddarGruerye, Swiss are great options too!
Instructions
Preheat oven to 375 degrees F. Butter a 9 x 9 inch baking pan and set aside.
In a large bowl whisk together the eggs, baking powder, salt, and pepper.
Stir in the cottage cheese, butter, and mustard.
Add the spinach, bacon and cheese and stir gently.
Pour mixture into prepared pan and bake for about 25 to 30 minutes or until the center is just set.
Let cool slightly and cut into 16 squares.
