In a medium sized bowl, place all the dry ingredients. Do not add the heavy whipping cream.
Whisk to thoroughly combine the ingredients.
Store the hot chocolate mix in an airtight container for up to 3 months.
To serve, heat 1 cup of your choice of milk (I favor whole milk) until just before it simmers. Add 3 tablespoons of the hot chocolate mix to the hot milk. Stir and continue simmering for about 1 to 2 minutes. The mix should dissolve but, there still may be a few unmelted mini chocolate chips.
Pour the hot chocolate into a mug and top with homemade whipped cream and a sprinkle of cinnamon.
To make the whipped cream, place the heavy whipping cream in a cold medium sized bowl. Beat with a handheld mixer (or a standing mixer if you have one) for 4 to 6 minutes. The whipped cream should form soft peaks when the beaters are lifted out of the whipped cream.
