Oatmeal, Almond and Apricot Lactation Cookies

Description

These tasty and nutritious lactation cookies work to boost milk supply. They're delicious cookies loaded with whole oats, dried apricots and almond flour. All the ingredients that help a nursing mom produce enough milk for her baby.


Ingredients

  • 2 1/2 cups prepared oatmeal, cooled *See Note
  • 1/2 cup salted butter, at room temperature
  • 1/2 cup dark brown sugar
  • 1 large egg
  • 2 1/2 cups almond flour
  • 1 cup chopped dried apricots
  • juice of 1/2 orange, about 2 tablespoons
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt

Instructions

  1. Preheat the oven to 375 degrees F. Line 2 large baking sheets with parchment paper or silicone baking mats. Set aside.
  2. A standing mixer, large food processor or heavy duty blender work best for this recipe. Cream the butter and dark brown sugar until light and fluffy, about 2 to 3 minutes. Beat in the egg.
  3. Add the cooled oatmeal, almond flour and chopped dried apricots. Mix until combined. The batter will be lumpy.
  4. Add the orange juice, baking powder, vanilla extract, cinnamon, and kosher salt and mix until combined.
  5. Drop the cookie dough by heaping tablespoons on to the prepared baking sheets. They don't spread much while baking. Place them about 1 inch or so apart on the baking sheet.
  6. Bake for 22 to 26 minutes. The cookies should be firm to the touch and golden brown. Let the cookies cool on the baking sheet for about 5 minutes before removing to a cooling rack.

Notes

How to make oatmeal ~ Bring 2 1/2 cups of milk to a boil and add 1 1/4 cups rolled oats and a pinch of kosher salt. Turn the heat down to medium low. Cook until the oatmeal is thickened and the milk is absorbed. Or use your microwave to cook the oatmeal. Put oats and milk into a bowl. Microwave on High for 2 minutes. Remove from the microwave and stir. Remove the oatmeal to a bowl so they cool.
