Glazed Orange and Poppy Seed Muffins

Description

Perfect to serve for brunch or stash in the freezer to enjoy later with a cup of coffee or tea. Exploding with citrus flavor, Glazed Orange and Poppy Seed Muffins are delicious ultra moist sweet treats.


Ingredients

Scale
  • for muffins-
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup oil (canola, vegetable, or coconut oil)
  • 1/2 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • juice and zest of 1 orange, save some zest for sprinkling on top of the muffins
  • 1 tablespoon poppy seeds
  • 3/4 cup whole milk
  • for glaze-
  • 1/3 cup granulated sugar
  • 2 tablespoons orange juice
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Line a standard sized muffin pan with muffin liners or spray with cooking spray.
  2. In a large mixing bowl, combine all the muffin ingredients. Mix until just blended.
  3. Fill muffin cups a little more than 3/4 full.
  4. Bake for about 16 to 20 minutes or until a toothpick comes out clean.
  5. Remove from oven and cool for 10 minutes.
  6. Meanwhile, make the glaze. In a small saucepan over medium high heat, combine glaze ingredients. Bring to a boil and cook, stirring occasionally, or until sugar dissolves. Remove from heat and cool for 5 minutes.
  7. Use a spoon and drizzle the glaze over muffins.
  8. Let glaze harden before serving.
  9. Store covered at room temperature for up to 3 days.

Notes

  1. Use any light tasting oil in the recipe. You can use vegetable oil, canola oil, or melted coconut oil.
  2. Save some zest for sprinkling on top of the muffins
