Heat a Dutch oven or medium sized stock pot over medium high heat and add 1 tablespoon of olive oil. When the oil begins to shimmer, add the lamb and season with salt and pepper.

Step 1

Remove the meat from the pot and place it in a bowl.

Add the flour to the browned meat. Toss the meat with a spoon until it is coated with the flour. Set aside.

Step 3

In the same pot, add the remaining 1 tablespoon of oil, the onion, celery and garlic. Sprinkle with a generous pinch of salt and a pinch of pepper.
