Gluten Free Peanut Butter Balls are no bake, bite sized treats that give you a little pick-me-up any time of the day. Made with whole ingredients including rolled oats, peanut butter and almond flour, these energy balls are the perfect poppable snack.

- 2 cups gluten free rolled oats
- 1 cup almond flour
- 1 cup mini semi sweet chocolate chips
- 1 teaspoon cinnamon
- 1/4 cup honey
- 1 1/3 cups peanut butter
Instructions
- In a large bowl, add all the ingredients. Stir to combine.
- With a medium cookie scoop, portion 1 tablespoon of the mixture. Roll into a ball. Place on a work surface.
- Continue portioning and rolling the mixture into balls.
- The energy balls can be served immediately. Store in the refrigerator for up to 1 week. Store in the freezer up to 2 months.
Notes
- Pick your oats ~ I prefer the hearty whole grains in rolled oats, but instant oats are an acceptable substitute. Skip steel cut oats as they are not as tasty in the recipe.
- Use mini chocolate chips ~ As the energy balls are small treats, mini chocolate chips are the perfect size to use.
- No stick ~ Spray the measuring cups with cooking spray and the honey and peanut butter will slide right out.
- Mix it up ~ It is easy to mix the ingredients together. But a stand mixer or hand mixer can also be used.
- Get scooping ~ A medium cookie scoop portions perfect peanut butter energy balls.
- Squish ~ It helps to squish the portioned peanut butter mixture in your hand. This helps the energy balls stay together and are formed in nice round balls.
