Chocolate Chip Peanut Butter Bread with Peanuts

Description

This quick bread is just the snack to enjoy with a cup of coffee or tuck into a lunchbox. With just a handful of ingredients, it takes a few minutes to mix up the thick peanutty batter for a moist and delicious bread.


Ingredients

  • 3/4 cup granulated sugar
  • 3/4 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • 1 1/2 cups light cream
  • 2 1/4 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/2 cup dry roasted and salted peanuts, chopped
  • 1/2 cup semi sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9 x 5 inch loaf pan and line the bottom with parchment paper. Set aside.
  2. In the bowl of a stand mixer, beat the granulated sugar, peanut butter, and vanilla extract until creamy. Add the beaten eggs and light cream and mix until well combine. Scrap down the sides of the bowl to ensure all the ingredients are combined.
  3. Combine the all purpose flour, baking powder and kosher salt.
  4. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Blend just until the ingredients are combined.
  5. Pour the batter in the prepared loaf pan. Evenly sprinkle the peanuts and chocolate chips over the top of the batter and press down lightly.
  6. Bake for 55 to 65 minutes or until a long wooden toothpick inserted into the center of the bread comes out clean or with just a few crumbs on it.
  7. Remove the bread from the oven and place on a cooling rack. Let cool about 30 minutes before unmolding.

Notes

  • A stand mixer is my first for combining the ingredients, but a hand mixer or good old fashioned wooden spoon and bowl work just as well.
  • Use creamy full fat peanut butter for this recipe. The bread does not contain any additional fat such as butter or oil. The full fat peanut butter ensures the bread is moist and delicious.
  • Light cream makes the loaf extra rich, but whole milk is a good substitute.
  • Scrape down the sides of the bowl to ensure all of the ingredients are fully incorporated.
  • Use a long wooden toothpick or skewer to check if the bread is done. If the pick comes out clean or with a few crumbs on it, the peanut butter bread is ready.
