expert tips
Freeze the watermelon cubes ~ Making watermelon ice cubes is a snap. Cut watermelon into 1 inch cubes. Place on a parchment paper or foil lined baking sheet about an inch apart. Put the sheet in the freezer for about 2 hours. When frozen, store the fruity cubes in a resealable bag for up to 3 months.
Thaw the limeade ~ When the limeade concentrate is liquid, it is easier to mix a pitcher of sparkling limeade cocktails. Either place it in the refrigerator overnight or on the counter for about 20 minutes to thaw it.
make ahead tip
If you like to prep a big pitcher of drinks in advance, this is the ideal recipe. Mix the limeade concentrate, mint leaves and vodka in a large pitcher. Store in the refrigerator. This is the pitcher with a lid that's great for the fridge.
When ready to serve, add the club soda. Serve in ice cube filled glasses with frozen watermelon cubes, limes slices and garnish with more mint leaves.

I don’t know why this doesn’t have a hundred ratings. I made it for the 4th of July and took it to a party .
I should have made double-maybe triple. It was gone in 5 minutes, and everyone raved about it. Light. Not too sweet. Perfect for a hot day.
Definitely gonna save and do again.
