Balsamic Caprese Chicken with Fresh Mozzarella and Blistered Cherry Tomatoes

  • 3/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 garlic clove (finely chopped)
  • 1 tablespoon fresh basil or 1 teaspoon dried
  • 1 tablespoon fresh oregano or 1 teaspoon dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds chicken tenderloins
  • 1/2 pound fresh mozzarella (sliced)
  • 1 pint grape tomatoes
  • ¼ cup chopped fresh basil


  1. In a small bowl, whisk the first 8 ingredients. Set aside.
  2. Place the chicken in a resealable bag and add about 3/4 of the marinade. Reserve the remaining marinade for basting the chicken while it grills. Marinate the chicken for at least 30 minutes or up to 6 hours.
  3. Heat a grill to medium high. Grill the chicken for about 3 - 5 minutes per side basting with the reserved marinade. During the last minute or 2 of grilling, top the chicken with the mozzarella and continue grilling until it melts. Remove to a serving platter.
  4. Meanwhile, quickly grill the tomatoes in a grill basket until slightly charred about 3 - 4 minutes. Remove to the platter with the chicken. Sprinkle with the basil, salt and pepper and serve.
